Ras Malai by rida

                                             Ras Malai

Ingredients

Milk 1 liter

Dried Milk 1 cup

Egg white 1

Baking powder ½ tsp

Sugar ½ cup

Cardamom powder ¼ tsp

Corn flour 1 tbsp

Kewra essence 1 tsp

Almond and pistachio 50 gm

Method:

In pan boil milk add cardamom powder and sugar.

Beat eggs and mix with baking powder and dry milk.

Now make small balls and put these balls in boiled milk cook for 3 to 4 minutes

Then dissolve corn flour with water and cook 3 to 4 minutes more.

Now for topping add kewra essence, pistachio and almonds on it and turn off the flame.

Method:

Boil milk with cardamom and sugar. Stir the sugar till it gets dissolved. Cook milk for 5-10 minutes.

Make a dough by mixing dry milk, baking powder, plain flour, melted ghee and eggs,. Then make small balls. Add these balls into milk which is prepared earlier and cook on high flame for 5 minutes, then lower the flame and cook it for 10-15 minutes. Garnish with pistachio slices and serve chilled.

Pani Puri by rida

Ingredients for golgappa:

Semolina ½ cup

Plain flour ½ cup

Method:

Mix semolina and flour and knead to a stiff dough with ¼cup water

cover dough with wet cloth keep aside for 1 hour make small balls

sand roll into thin purees and deep fry.

Filling:

Potatoes 1 (cut into cubes & boiled)

Chick peas 1 cup (boiled)

Sweet chutney ½ cup

Ingridients for pani:

Mint leaves ½ bunch

Coriander leaves 2 tbsp

Green chili 1

Lemon juice 2 tbsp

Black salt 1 tsp

Salt ½ tsp

Roasted crush cumin 1 tsp

Crushed black pepper ½ tsp

Fennel seeds ½ tsp

Dried ginger ½ tsp

Method for pani:

Grind all the ingredients for pani into a fine paste,

add 3 cups chilled water to it mix well chill and serve.

To serve:

Make a hole in the center of puri fill with boil chick

peas and boiled potato, add tsp of sweet chutney fill it with pani

Chocolate 100 gm

Wafer Biscuit 1 packet

Butter 50 gm

Brown sugar 50 gm

Cream 1 cup

Method

On low flame cook 100 gm chocolate with 50 gm brown sugar, 50 gm butter and 1 cup cream. Turn the flame off when chocolate melts and mixture thickens. Pour some chocolate sauce in tray, put wafer biscuit on it, and spread remaining chocolate on top. Cool and cut when firm.

Chocolate 150 gm

Desiccated coconut 1 cup

Gelatin powder 1 tbsp

Warm water 4 tbsp

Condensed milk ½ cup

Vanilla essence ½ tsp

Method

Dissolve 1 tbsp gelatin powder in 4 tbsp warm water. Add 1 cup desiccated coconut and ½ tsp vanilla essence. Mix well and add ½ cup condensed milk. Mix continuously. Spread this mixture in tray and cut with hear shape cutter. Put in fridge to firm. Melt 150 gm chocolate in double boiler. Dip coconut hearts in it and leave to cool. Garnish with chocolate and Serve

Flour ½ kg

Dry milk powder ½ cup

Lukewarm milk to knead

Chicken cubes ½ kg

Tomato ketchup 1 cup

Oregano 1 tsp

Salt ½ tsp

Chili sauce 2 tbsp

Vinegar 2 tbsp

Soya sauce 2 tbsp

Cheddar cheese 1 packet

Method

Mix together ½ kg milk, 2 eggs, ½ cup dry milk powder, ½ cup oil, ½ tsp salt, 1 tbsp yeast and knead with lukewarm milk. Leave it to rise for 30 minutes. Marinate ½ kg chicken pieces with 2 tsp red chili powder, ½ tsp salt, 2 tbsp chili sauce and 2 tbsp soya sauce. Now cook the marinated chicken in 1 tbsp oil for 10 minutes on low flame till chicken is tender. Make Roti of knead flour, leave for 10 minutes. Mix together 1 cup tomato ketchup, 1 tsp oregano, 1 tsp garlic and 2 tbsp vinegar. Pour ketchup mixture on Roti, now spread chicken mixture, put chopped tomato, chopped onion and chopped capsicum on top. Now put 1 packet of grated cheddar cheese and bake in a pre heated oven of 200 degrees for 15 minutes

Chocolate 200 gm

Cocoa powder ½ cup

Gelatin powder 2 tbsp

Milk 2 cup

Corn flour 2 tbsp

Method for base:-

In a mixing bowl add 100g melted butter, 3 cups crushed biscuits and 2 whipped eggs. Then add 2tbsp white flour and mix with the help of your hands. Put the mixture on a greased mould and bake at 200C for 20 minutes. After the cake is done allow it to cool

Method for filling:-

In a saucepan add 200g chocolate, 1 packet cream,1/2 cup cocoa powder and 2tbsp gelatin. Cook for 3-4 minutes. In a separate sauce pan heat 2 cups milk, 1 cup sugar and 2tbsp corn flour. Heat the milk stirring continuously until it becomes thick.

Turn the flame off and pour the chocolate mixture into the milk and mix well.

Pour into a mould and refrigerate for one hour.

Method:-

In a pan 2 heat 2tbsps of oil and sauté 1tsp crushed garlic. Fry for 1-2 minutes then add 1/2kg boneless chicken , 2chopped onions,2tsp white cumin, 1tsp salt,1tsp pepper,2tbsp chopped coriander. Cook until the chicken is tender and turn the flame off.

Method for making tomato sauce

In a separate pan heat 2tbsps oil add 1tsp crushed garlic, 250g finely chopped tomatoes2tbsp brown sugar, 1/2tsp salt and 1tbsp crushed red chili .Cook until the tomatoes are tendered. Then add 1 cup tomato paste, 2tbsp lemon juice and 1tsp black pepper mix well and turn the flame off.

Spread a layer of pita bread on a baking tray. Then spread a layer of chicken and then a layer of tomato sauce. Continue alternating the layers and lastly top with 6 ounces of mozzarella cheese .Bake at 190C for 1o minutes.

Method:-

In a saucepan add 100g of butter and 2tbsps cocoa powder. Stir and cook until a uniform consistency is formed.

Now add 1 cup sugar and stir until it dissolves. In a separate bowl beat two eggs along with 1/2tsp vanilla essence. Pour the melted butter and cocoa mixture into the eggs and mix well. Add 1tsp baking powder and 1 cup white flour. Mix well until a smooth consistency is reached .Pour the mixture into a baking tray and bake at 200C for 20 minutes.

Method for topping:-

Slice the brownies into cone shaped wedges. Pour 200g grams whipped cream , 1cup pineapples, 1 cup chopped walnuts, 2 bananas and 2tbsp chocolate sauce. Refrigerate and serve cold.

Sieve 1 cup flour with baking powder and cocoa powder. Beat butter with 1 cup castor sugar. Add in 4 eggs one by one. Also add ½ tsp vanilla essence. Now fold in sieved flour mixture. pour the mixture in a greased pan and bake in a pre heated oven of 200 degrees for 30 minute.

Method for Topping

Cook 200 gm chocolate with 1 cup cream and 2 tbsp oil till chocolate melt. Turn the flame off. Now spread 4 tbsp sugar syrupe on cake, now put chocolate syrup. Lastly cover the cake with dassicated coconut and garnish with bunty.

In a pan heat 1 cup ghee and fry 1 cup semolina till it turns golden brown in color, add 1 cup sugar and 2 cups desiccated coconut, fry again till sugar dissolves. Separately dissolve 2 cups dry milk powder in ½ cup of water and add in the semolina mixture. Mix well and cook for 10 minutes on low flame. Sprinkle ½ tsp cardamom powder, turn the flame off and lastly add 1 cup chopped almond and pistachio, 1 tsp kevra. Serve hot.

Flour 250 gm

Semolina 125 gm

Ghee 2 tbsp

Method

Mix together 250 gm flour, 125 gm semolina, 2 tbsp ghee and knead to a firm dough with 1 cup milk. In a saucepan make the sugar syrup with 250 gm sugar, 1 cup water and 4 crushed green cardamoms and 2tbsp ghee .Heat on a medium flame till the syrup thickens. Take a sufficient amount of dough, press it hard in the strainer, which should be placed on wok containing hot ghee. Hence small balls of dough will formed. After frying drain out oil. Dip in sugar syrup overnight. Garnish with chopped almond and pistachio.

Cook for 30 minutes till water dries and lentil is tender. Now put boiled lentil with boiled tomatoes in a chopper and chop well. Add in mixture 4 chopped green chilies, ½ bunch chopped fresh coriander, ½ bunch mint leaves, 1 chopped onion, 2 eggs and 1 tsp all spice powder. Make kababs and fry in hot.

Method for filling

Beat ½ litter Dairy Cream with ½ cup castor Sugar and 1 tsp vanilla essence. Cut sponge in to two pieces. Spread 1 cup pineapple juice and fill cream. Freeze for 1 hour and serve.

Now cool the mixture and add 250 gm yogurt. Also add gelatin mixture and beat well. Pour this mixture in serving bowl. Garnish with cherries and chocolate.

Mix together ½ cup Flour, ½ cup Semolina, ½ cup Castor sugar, ½ cup Poppy seeds, 4 Green cardamom and 4 tbsp Ghee. Knead with milk and leave for 30 minutes. Make balls and roll. Spread some ghee and again roll like a Swiss roll. Again make ball and then roll. Fry with ghee and serve

Pistachio Ice Cream BY RIDA

Ingredients

Milk ½ liter

Condensed milk 1 tin

Vanilla custard powder 2 tbsp

Sugar ½ cup

Pistachio chopped 100 gm

Gelatin powder 1 tbsp

Green food color a pinch

Cream 250 gm

Method

Boil ½ liter milk; add 2 tbsp custard powder and ½ cup sugar. Cook till the milk thickens. Add 100 gm chopped pistachio. Leave it to cool. Dissolve 1 tbsp gelatin powder in warm water. In a blender put custard, gelatin mixture, 250 gm cream and 1 tin condensed milk. Blend for 1 minute. Pour this mixture in an airtight box and freeze for 3 hours.

In a bowl mix together ½ cup castor sugar, 100 gm butter, ½ tsp vanilla essence, ½ tsp baking powder and 2 eggs. Now slightly add 1 cup flour and knead to dough. Put in fridge for ½ hour, cut with cookies cutter. Brush the beaten egg, sprinkle some cinnamon powder and bake on 150 degrees for 20 minutes.

Chop ½ kg boneless Meat along with 4Green chilies and 1 fried Onion in a chopper. Now add 1 tbsp Ginger garlic paste, ½ cup Roasted peas powder, 2 tsp Salt, 1 tsp All spice powder, 2 tsp Red chili powder, 1 tbsp Coconut powder and 1 tbsp Poppy seeds. Mix well. Cut the boiled eggs into two pieces. Coat the meat mixture on it and fry in hot oil.

Method for Glaze

Cook 2 tbsp lemon juice, 6 tbsp Honey, 1 cinnamon stick and 1 tbsp vinegar. Pour this mixture on top of cake, garnish with lime rind and serve.

Strawberry jelly 1 packet

Lukewarm water ½ cup

Method

Dissolve 1 tbsp gelatin powder in ½ cup lukewarm water. In another bowl beat 1 cup cream cheese, 1 cup milk, ½ tsp vanilla essence, 250 gm cream and gelatin mixture. Pour this mixture in a serving bowl and freeze for 1 hour. Dissolve 1 packet of strawberry jelly in 2 cups hot water and leave it to cool. Pour the prepared jelly on ice cream and freeze for more 30 minutes till firm. Serve chilled.

Castor sugar ½ cup

Salt ½ tsp

Yeast 1 tbsp

Lukewarm milk 1cup

Lukewarm water ½ cup

Method

Dissolve 1 tbsp yeast in ½ cup lukewarm water. In another pan add 2 cups flour, 50 gm butter, ½ cup castor sugar, ½ tsp salt, 3 eggs, ½ cup lukewarm milk and yeast mixture. Knead to soft dough. Leave it to rise for 30 minutes. Knead again and make 4 balls of different shapes. Brush the beaten eggs on top, cover with plastic for 10 minutes. Bake on 200 degrees for 20 minute

Kidney Beans Curry by rida

Ingredients

Red Beans (boiled) ½ kg

Tomato 250 gm

Onion 2

Tamarind pulp 1 cup

Turmeric 1 tsp

Red chili powder 2 tsp

Cumin (roasted) 2 tsp

Carom seeds (roasted) ½ tsp

All spice powder 1 tsp

Salt 1 tap

Green chilies 4

Green coriander ½ bunch

Oil ½ cup

Method

Heat ½ cup oil and fry 2 chopped onions till golden brown. Take out the fried onion and grind with 250 gm tomatoes. Heat oil in a pan and add 2 tsp red chili powder, 1 tsp salt, 1 tsp turmeric, 2 tsp roasted cumin, ½ tsp roasted carom seeds and tomato onion Fry well till the oil forms a separate layer on top.. Add ½ kg boiled red beans and ½ cup water. Cook for 10 minutes on low flame. Now add 1 cup tamarind pulp, 4 green chilies, ½ bunch coriander leaves and 1 tsp all spice powder. Turn the flame off and serve.

Cook 200 gm of chocolate with 1 tbsp gelatin powder in double boiler. Then leave it to cool. Beat 1 packet cream with ½ cup castor sugar till thickens. Now fold the chocolate mixture into the cream. Pour this mixture in serving bowl. Garnish with chocolate and serve.

Method

Peel the boiled potatoes, put in a chopper with 2 eggs, 50 gm butter, a pinch of nutmeg, ½ tsp black pepper and ½ tsp salt. Chop well and fill this mixture in piping bag. Make into any shape, brush the egg on top of each potato and bake on 200 degrees for 15 minutes.

Method for Pudding

1)In a pan, put 250 gm mince, 4 tbsp gram lentil soaked, ½ tsp cumin, 1 tsp fennel seeds, 1 tsp whole coriander, 2 green cardamom, 6 whole red chili, 1 tsp salt, 1 tsp chopped ginger, and 4 garlic cloves.

2) Boil on low flame with 2 glasses of water. When water dries and all ingredients are tender turn the flame off and allow to cool

3) Add 1 boiled potato to the meat and chop the mixture in chopper. Add 1 egg, 2 tbsp fresh coriander, 2 tbsp mint leaves, 2 green chilies, and 1 tsp all spice powder. Mix well.

4)Shape into round kebabs and shallow fry in hot oil.

Blend together 250 gm ghee, ½ cup roasted gram flour, 250 gm sugar, 4 eggs, ¼ tsp cardamom powder, and 1 tsp finely chopped pistachio. Blend for 3 to 4 minutes. When the sugar dissolves, put this mixture in a pan and cook on low flame. Stir continuously. When it turns to golden brown and the ghee forms a layer on top, pour this mixture in a greased oven proof tray. Spread finely chopped pistachio, press with a spoon. Leave it to cool, cut into pieces, garnish with silver paper and serve.

Put a cheese slice on each. Now roll it from one side. Brush with beaten egg. Sprinkle castor sugar on top.

Peel 1 kg mangoes and cut into pieces. Cook mango pieces with ½ litter water till mango pieces are tender. Blend this mixture in a blender. Drain the mixture and allow cooking again. 2)Now add 2 tsp ginger garlic paste, 250 gm yogurt, 50 gm plum, 1 tbsp whole spices, 4 star anise, ½ tsp turmeric, 1 tbsp red chili powder, 1-1/2 tsp salt, 1 tsp all spice powder, and 2 tsp coriander powder.

3) Fry on low flame for 20 minutes. Add sliced tomatoes, fresh coriander, mint leaves, and green chilies. Fry for 5 minutes until the oil forms a separate layer on top. Now put ½ kg boiled rice, sprinkle yellow food color on top, cover and simmer for 20 minutes

1)In a bowl beat 1 cup coconut milk, 1 glass milk, 2 eggs and 2 tbsp sugar.

2)Put this mixture in a sauce pan, put some water in another pan, boil the water, and lower the sauce pan in it and cook the milk mixture till it thickens

3) Add 2 tbsp gelatin powder dissolved in 4 tbsp Luke warm water. Turn the flame off and leave it to cool. Add 2 mashed bananas.

Method for making paratha roll:-

2) In a bowl, add 2tbsp dried flour, 1/2 kg mashed potatoes, 1tsp salt and chutney. Mix all the ingredients well.

3)Now divide the dough into equal portions, roughly the size of a ball. With a rolling pin roll out the dough into flat circular shape.

4)Fill the dough with the mashed potato mixture .Roll it again and fry the paratha on a flat pan.

Method for Dough

Mix salt, yeast, oil, egg, flour and sugar. Knead to soft dough with warm milk. Leave it to rise for 30 minutes.

In a pan, heat 1 tbsp oil, add ginger garlic paste and fry. Now add chicken, fry on high flame, grind boiled tomatoes, and add to the chicken mixture. Now add salt, and cook on high flame till water dries. Then add soya sauce, chili garlic sauce, sliced onion, and mushrooms. Cook for 1 minute more and turn the flame off. Now roll the dough and Pour the prepared filling mixture on it. Spread grated mozzarella cheese. Also spread fresh coriander leaves, bake on 200 degree for 20 minutes.

Method

Beat together butter, castor sugar and coco powder with a beater. Add lemon essence and 4 eggs, beat well again. Now add flour and baking powder. Continuously beating and add cream. Now add in mixture halves of the quantities of dry fruits and cherries. Mix well. Pour the mixture in a mold. Spread remaining dry fruits and cherries on top. Bake on 200 degrees for 25 minutes, then brush egg yolk and grill bake for 1 minute more. Take out from oven, cool, and take separate from mold.

Method

Boil 2 cups of milk, in a pan, beat 3 eggs along with 1 cup brown sugar till the sugar dissolve. Add hot milk in it and beat well again. Add in 1 cup of cream and ½ tsp of vanilla essence. Mix well and sieve this mixture. Pour the mixture into a mold. Put mold in a tray full of water, put this into oven, and bake for ½ hour on 250 degrees. Then take it out of oven. Garnish with mint leaves and brown sugar. Serve.
