Black Walnut Cake

                          Make Black Walnut Cake


Cake is a very delicious dessert which we can use in birthdays and many special occasions like Christmas etc. This cake is made of special distinct flavor of black walnuts.

Ingredients

• 11/2cup butter

• 1 cup shortening

• 4 cups sugar

• 6 eggs

• 4 cups all-purpose flour

• 1 teaspoon baking powder

• 2 teaspoon ground cinnamon

• 11/2 cup milk

• 1 teaspoon vanilla extract

• 1 cup chopped black walnuts

Directions

1. Mix together butter and sugar until light. Beat the eggs and mixing just until the yellow part disappears.

2. Add flour, baking powder, and cinnamon; stir into the creamed mixture with the milk alternately.

3. Add vanilla and Walnuts

4. Baking time various according to oven. ( appox. 50 min)

5. Black Walnut Cake is ready.

                                        Mithas–e–Guftugu

Ingredients:

1 tbsp Amul Ghee

1 cup Sevaiyan

1 ½ cup    Sugar

2 tbsp Khoya (grated)

½ litre Amul Taaza Milk

3 tbsp India Gate Basmati Rice (washed and ground to a coarse powder)

2 tsp Cardamom powder

6-8 nos Almonds (cut into slivers)

Method:

1. Heat ghee and fry sevaiyan in it till golden brown. Keep aside.

2. Combine ½ cup sugar with just enough water to cover it and cook till a two-string consistency syrup is made. Mix in fried sevaiyan and cook for a few more minutes.

3. In another vessel, combine the khoya with half the milk and ½ cup sugar and cook to make rabri.

4. In a frying pan, combine remaining milk with remaining sugar and ground rice and cook to make firnee. Mix in cardamom powder.

5. In a serving bowl, make a layer of sevaiyan. Top with a layer of rabri, followed by a layer of firnee, topped with almonds. Repeat the process for all serving bowls. Serve chilled.

Ingredients:

1 packet Orange jelly crystals

300 ml Amul Cream

11/2 tsp Lemon zest

1 nos Lemon (juice extracted)

200 gm Chocolate biscuits (crushed)

3 tbsp Cocoa powder

2 tbsp + 1 tsp Amul Butter

3 -4 tbsp Sugar (powdered)

2 tbsp Cashewnuts (finely chopped)

11/2 tsp Maida

1 nos Orange (segments separated)

Method: 

1. Heat 1 cup water and dissolve ¾ packet of jelly crystals. Cool and mix in cream. Refrigerate the cream for 5 minutes.

2. Mix  lemon zest, lemon juice and 11/2 tbsp  sugar into the cooled cream mixture.

3. Combine biscuits with 2 tbsp cocoa, 2 tbsp butter and cashewnuts and press into glasses. Refrigerate for 5 minutes.

4. Pour the orange cream mixture on top of the biscuit mixture and chill till set.

5. Combine 11/2 tbsp sugar with 1 tbsp cocoa, maida and ½ cup water. Cook on a low flame stirring continuously till mixtue thickens, cool a bit and mix in 1 tsp butter. Strain and fill into piping bag.

Ingredients:

2 cups: Refined flour

1 tsp: Baking powder

¾ tbsp: Soda bicarb

1 cup: Amul curd

A few drops of Vanilla essence

¾ cup: Milk

¾ cup: White butter

¾ cup: Caster sugar

6 tbsp: Cocoa powder

500 gm: Chhena

2 nos. Star anise

3 cups: Sugar

400 ml: Non-dairy cream

3 nos. Tangerines

3 nos. Sweet limes

1 nos. Butter paper

Method:

1. Preheat oven to 170*C. Grease a cake tin and line it with butter paper.

2. Sift flour, baking powder, soda bicarb and cocoa powder together. Heat the milk till it is lukewarm.

3. Whisk the curd, caster sugar, butter and vanilla essence together till smooth and frothy.

4. Fold in the flour mixture alternating with milk. Mix quickly but gently to a smooth batter.

5. Pour into the cake tin and bake on the centre rack for 20 minutes.

6. Meanwhile in a saucepan mix 3 cups of sugar with ½ cup milk, 2 cups water and star anise. Place on flame and stir till sugar dissolves. Bring the mixture to a boil.

7. While the sugar syrup is cooking, grate/crumble the chhena, mix in 1 tsp flour and knead till very smooth and light. Shape into small balls.

8. Check the cake. Insert a skewer or knife in the centre. If it comes out clean, remove cake from the oven and after a few seconds, demould it and leave to cool.

9. Check the sugar syrup. Clarify it by spooning off the grey layer. If syrup has come to a boil, gently add the chhena balls and poach them till done. To test whether rasgullas are cooked, drop one in a deep bowl full of water. If it sinks to the bottom, the rasgulla is cooked.

10. If rasgullas are done, remove and cool.

11. Whip the non-dairy cream till soft peak stage. Cut the cake into three horizontal layers. Cut rasgullas in half. Peel and cut tangerines and sweet limes into segments.

12. Arrange one layer of the cake on a presentation plate. Arrange the rasgullas and place one more layer on top.

13. Fill half the whipped cream into a piping bag with a large star nozzle. Cover the cake with the remaining cream. Arrange the tangerines and sweet limes as shown. Pipe stars onto the cake using the piping bag and chill till set.

Master chef Recipe ‘Black Forest Rasgulla Cake’ – Simply Brilliant Cake by Star Plus Masterchef India – Indian recipe

In last week’s episode of master chef contestants faced a challenge to make Black forest rasgulla cake. It was not ordinary Black forest cake but it was full of fruits like orange and sweet lime, and melons. These fruits were introduced to balance the extra sweetness of rasgulla. Basically this cake is a combination of 3 main components:

Rasgulla, Black Forest cake, Blue berry jam

Let see the recipes of these three separately:

Rasgulla as it name suggest ‘Ras’ and ‘gola’. Ras is water syrup and ‘gola’ is a formation of milk. Let see gola part first from Ras gulla.

Ingredients

Milk – 1 liter

Lime juice- 2 spoon

Arrow Root- 1 table Spoon

Sugar – 300 gm

Method

The main ingredient to make rasgulla is chenna. It can be bought from dairy or can be prepared at home. In masterchef participates were provided ready made chenna. But we will tell you how to cook chenna at home.

Prepare Chenna at home.

First you need to boil the milk in some heavy metal base utensil. Once milk start boiling squeeze few drops of lime juice into milk .This way milk will start curdling. When milk curdled completely then you will see water will separate from coagulated part of milk.

Now wrapped this coagulated component in cheesecloth and drain extra water from it.

Chenna is ready to use in Rasgulla.

Now spread chenna in a flat surface pan or thali and mix arrowroot and baking powder well. Now knead this mixture and turn into a dough. This dough is ready to make Rasgulla. Now make small balls out of it.

Sugar Syrup (chashani)

Take 300gm Sugar into a pan and pour 1 liter of water and put this pan on flame. When it starts boiling put already prepared small balls of chenna into sugar syrup. Let it cook for 15-20 minute. Rasgulla will soak syrup and become large in size. Now put off the flame let it cold for a while.

Your Rasgullas are ready!

Cautions

Remember Smita dugger how her rasgulls were dismantling in Syrup. To avoid such situation keep in mind the expert comment of Chef kunal, ‘Do not put chenna balls into too watery syrup other wise it will not hold in syrup and they will melt in syrup’.

Blue Berry Jam.

Ingredients

Blue Berry ½ kg

Sugar 250 gm

Method.

Take a small batch of blue berry.

You need to wash the berries in a colander.

Now remove bits of stems, leaves and mushy berry.

Manually crush the berries or run the blueberries through a blender until you get a smooth consistency.

Now add sugar and mix the blueberries with the pectin and cook to a full boil.

Now set the mixture in a pan or jar and wait till it gets cold.

Blue Berry jam is ready!

Black Forest cake

It is basically a German dessert .In masterchef they make egg less Black forest cake. The Masterchef cake was different from ordinary black forest cake as they replaced traditional cherries with fruits and rasgullas.So lets have a look how they prepare it.

Ingredients:

All Purpose Flour – 2 cups

Baking Powder – 1 teaspoon

Baking Soda – 2 teaspoons

Unsweetened Cocoa Powder – 3/4 cup

Rasgulla ( pieces) 8-10

Orange (pieces) ½ cup

Sweet lime (pieces) ½ cup

Sugar – 2 cups

Milk – 1 cup

Butter- 1/2 cup

Chocolate -125gms

Fresh whipped cream -250 gms

Melons 8-10 pieces

Blue berry jam 300 gms

Method

Melt butter in a pan on a very low temperature.

Remove the butter from the flame and let the butter cool.

Sift Maida, cocoa powder, baking powder, cooking soda and salt together. Make sure your mixture should not be lumpy.

Grease a baking tray with little butter. Dust it with Maida and keep it aside.

In another bowl beat butter then slowly add the dry mixture while beating well in one direction. Keep beating until the entire dry mixture is fully incorporated.

Now add the milk slowly and beat for a minute.

Pour the mixture into the greased pan. You do not have to spread the mixture using a spoon, if the mixture is of the right consistency.

Place in the centre of the pre-heated oven and bake for 30 minutes. The temperature and baking time can vary from oven to oven. Hence, test the cake at around 25 minutes to see if it is done. Bake for 25 to 30 minutes, until a wooden tooth pick inserted into the center of the cake comes out clean. When it is done, let it cool for a while

Now cut the cake into 3 layers.

Chocolate scrape:

First you need to melt the chocolate in a pan.

Keep stirring constantly once chocolate begin to melt. Do not overheat chocolate as it doesn’t response very well to high temperature.

Remove the chocolate from the heat and pour chocolate on waxed sheet on top of baking sheet. Spread chocolate in a thin layer with the help of spatula.

Now gently remove sheet and allow the chocolate to sit until hardened. You can also put in a refrigerator to cool fast.

Place the cooled sheet on a steady, non-slip surface.

Now Take long knife and cut long chocolate scrape.

* If you do not want to do all this process. Then just take a bar of chocolate and grate it with the help of grater.

Assembling the cake:

Now take first layer of cake and spread whipping cream all over the layer and spread pieces of fruits and rasgullas.

Take another layer and spread the blue berry jam and fruits,

Take another layer and repeat the process of spreading whipping cream and fruits.

Finally garnish it with whipping cream and chocolate scrapes and melons.

Black Forest cake is ready!

14.    Cut ginger into juliennes and lemons into slices. Caramelize sugar and coat ginger and lemon slices. Garnish the prepared cake with candied juliennes, lemon slices and maraschino cherries.

For pizza dough

White flour 1 cup

Salt pinch

Yeast 1 tbsp

Sugar 1 tsp

Oil 1 tsp

Luke warm water as required

Method:

Take a bowl, put 1 cup flour, add pinch of salt, 1 tbsp yeast, 1 tsp sugar, 1 tsp oil and lukewarm as required. Mix it till its combine and leave it for rest so the dough get rise.

Pizza sauce

Fresh red tomato ½ kg

Salt & pepper as required

Oregano pinch

Garlic chopped 1 tbsp

Oil 1 tbsp

Method:

Take ½ kg tomato, peel them and mash them with hand. Take a medium cooking pan and heat 1 tbsp of oil and add 1 tbsp chopped garlic. Now add put mashed tomato and sauté it. Now put salt and pepper. In the end sprinkle the oregano form top and cook till it become thick sauce.

Macaroni 1 cup

Salt & pepper to taste

Red chili powder ½ tsp

Crushed red chili ½ tsp

Oregano ¼ tbsp

Worchester shire sauce 1 tbsp

Fresh tomato puree 1 cup

Capsicum 1

Onion 1

Garlic chopped 1 tbsp

Green chili chopped 2

Green coriander chopped ½ bunch

Cheddar cheese grated ½ cup

Oil 2 tbsp

Carrot 1

Cauliflower 1 cup

Method:

Boil 1 cup macaroni in boiling water. Peel tomatoes and mash it with hand. Now chop onion, cut capsicum and carrot in small cubes. In a pan heat 2 tbsp oil and put 1 tbsp chopped garlic, onion and sauté it for couple of minutes. Then add carrot, capsicum, cauliflower, tomato puree, chopped green chilies, red chili crushed, Red chili powder, Pinch of oregano, salt, pepper and Worcester shire sauce. Now stir it and mix it well. Now add boiled macaroni in to vegetables and mix it. Now take a deep baking glass dish, put the macaroni mixture in it, and sprinkle cheddar cheese from top with crushed red chili crushed and oregano and bake it in oven on 150 c for 10 minutes

      • Carrots, grated n steamed in its own water 2c

      • Milk 4 ½ c

      • Rice, soaked for 2 -3 hours n spread out n dry on a clean cloth n grind ½ c

      • Sugar ¾ c – to taste

      • Illachi powder 1tsp

      • Saffron , optional ¼ tsp

      • Pistachio, blanched n chopped 1 tbsp

      • Almonds , blanched n chopped 1tbsp

      Method:

      1. Steam the carrots in its own water as it prevents the milk from cuddling.

      2. Boil milk, when it boils add rice n cook for 5-7 mins.

      3. Now add the carrots to the milk.

      4. Check out carrots n rice when tender add sugar.

      5. Stirring continuously.

      6. When done remove from flame n add saffron n illachi pd n dish out.

      7. Decorate with pasticcio n almonds n chandi warq.

basic no bake cheese cake

      Ingredients:

      • Philadelphia cream cheese block: 2 x 250 gm

      • Digestive biscuits: 1 large packet

      • Butter melted: 100 gm

      • Thick Cream: 300 ml

      • Lemon juice: 2Tbsp

      • Lemon zest: 1 tsp

      • Sugar : to taste or 1 cup

      Decoration:

      • Chocolate topping sauce(Optional)

      • Chocolate chip (optional)

      • Cocoa powder (optional)

      Method

      • Grind the digestive biscuits in the food processor.

      • Add melted butter to crushed biscuits, mix well

      • Press into bottom of 9" (23 cm) spring-form pan evenly. Chill crust thoroughly in the refrigerator.

      • Beat the thick cream until soft peaks are formed & set aside.

      • Cut the cream cheese block into cubes & start beating, adding in sugar little by little, until it becomes a smooth mixture without any lumps.

      • Add in lemon juice & lemon zest (optional).

      • Add in the beaten thick cream into the cheese mixture & fold it with a metal spoon or spatula.

      • Pour the mixture on to the prepared base…

      • Dust with cocoa powder or sprinkle chocolate chip,, or with chocolate sauce

      • Refrigerate the prepared cake until it is well set or at least few hours.

      • Enjoy

      Option2. You can beat the thick cream, cream cheese & sugar together

Chicken Kachi Biryani

Ingredients

Chicken 1 kg

Yogurt 1 cup

Chili Powder 2 tsp

All spice powder 1 ½ tsp

Salt 1 ½ tsp

Ginger Garlic Paste 2 tsp

Brown Onion 1 cup

Milk ½ cup

Saffron ½ tsp

Kewra water 1 tsp

Potatoes 3

Coriander leaves chopped ½ cup

Mint leaves ½ cup

Green Chili 6

Rice ½ kg

Whole spices mixed

Salt 3 tbsp

Method

1. Soak rice for 30 minutes. Boil in water with 3 tbsp salt and whole spices till half done

2. Drain and keep aside.

3. Marinate Chicken with yogurt, ginger garlic paste, chili powder, salt all spice powder half quantity of brown onion, half quantity of oil and green chili for 1 hour.

4. In a pan spread the chicken mixture, then top with chopped coriander and mint leaves. Then top with boiled rice, remaining brown onion oil, milk and saffron and kewra. Cover and cook on low flame for 45 min

Devilled Sandwiches

        2 hot dog buns

      2 chicken breasts (boiled and shredded)

      1 capsicum (cubed)

      1 tin of sweet corn

      White sauce

      Grated cheddar cheese

      Ketchup

      For white sauce:

      Melt 2 tbsp butter in a pan. When it melts, add 2 tbsp plain flour in it. Mix it well. Then add half tsp salt, half tsp pepper, half tsp mustard powder and half of a chicken stick cube or half cup of chicken stock. Also add half cup of milk. Continuously stir it.

      Note: When you boil and shred the chicken breasts, mix green masala (2 small chopped green chillies and some corriander) in it.

      Method:

      When you have prepared the white sauce, add the shredded chicken in it. Mix one cubed capsicum, and a tin of sweet corn. Mix it well. Cut the hot dog buns into 2. Apply this chicken mixture on the hot dog slices. Add grated cheddar cheese to it. Then make designs on it with ketchup or pour ketchup on it from the top. Put it in the oven for 5 minutes or until the cheese melts!!!

      Ingredients for sponge:

      Eggs 4

      Flour 4 ounce

      Caster sugar 4 ounce

      Baking powder 1 tsp

      Strawberry essence ½ tsp

      Red color few drops

      Ingredients for crumble:

      Sugar 6 ounce

      Almonds 4 tbsp

      Ingredients for topping:

      Fresh cream 16 ounces

      Fresh strawberries 8 ounces

      Sugar syrup ½ cup

      Method for cake:

      Beat eggs very well, gradually add in sugar, and add essence color.

      Sift flour and baking powder; fold in the mixture very lightly.

      Pour into greased 2 ….9 inches round tin and bake for 30 minutes in a pre heated oven for 30 minutes.

      Cut the cake in layers soak with sugar syrup spread with whipped cream crumble and strawberries, again repeat layers till all have been used cover top and sides of cake with cream and crumble decorate with piped cream and strawberries


     note method for crumble.  just hav to put granulated sugar or castor sugar in saucepan,the sugar will melt. if u r still unsure then add only 1 tbsp water. melt it then add almond put on greased tray when it has harden then broken into  pieces


      hey , could anyone plz tell me that can i use canned strawberries or pineapples for the gateaux?

    

     peach or pineapple can be used to replace strawberries. She used her preserved strawberries, which can be same as canned strawberries because strawberries of the season are sour and it will change the taste of the cake

  Ingredients

      Chicken 1kg

      Lemon juice 5tbsp

      Green chili 6

      Ginger garlic paste 1 tbsp

      Chili powder 2 tsp

      Turmeric powder 1/2 tsp

      White cumin whole 2 tsp

      Salt 1-½ tsp

      Ani seeds 1 tsp

      Fenugreek seeds ½ tsp

      Onion seeds 1 tsp

      Coriander seeds 2 tsp

      Oil ½ cup

      Method

      Coarsely grind the aniseeds, fenugreek seeds, onion seeds and coriander seeds. Keep aside after grinding.

      In a bowl add the chicken ,salt and lemon juice and marinate for 30 minutes

      In a large pan heat oil and add ginger garlic paste, chili powder and turmeric .Add a quarter cup water and sauté .

      Add in the marinated chicken and fry for 5 minutes.Now add the whole green chillies and all ground seeds

      Cover and leave it to cook for 20 minutes till chicken is tendered and the oil forms a separate layer on top.

      Boneless chicken ½ kg, sliced

      Onions 2 tbsp, chopped

      Garlic paste 1 tsp

      Capsicum 1, sliced

      Oregano leaves 1 tsp

      Black pepper 1 tsp, leveled

      Chili powder 1 tsp

      Mustard powder 1 tsp

      Flour 2 tbsp, heaped

      Ketchup ½ cup

      White sauce 2-½ cups

      Worcester sauce 2 tbsp

      Pasta 1-½ cup, boiled

      Egg head boiled 2

      Oil ¼ cup

      Water 2 cups

      For topping:

      Grated cheddar cheese 1 cup

      Egg 2 beaten

      Fresh bread crumbs 1 cup

      White sauce:

      Salt ½ tsp

      Pepper ½ tsp

      Mustard powder ½ tsp

      Butter 2 tbsp

      Stock cube ½

      Flour 3 tbsp, heaped

      Milk 1-½ cup

      Water 1 cup

      Method for white sauce:

      1. Heat butter, add flour & seasoning, sauté for 1 minutes, remove from fire.

      2. Add milk, water & chicken powder & cook till thick.

      Method for casserole:

      1. Heat oil, fry onion transparent.

      2. Add garlic paste, add chicken & sauté for 5 minutes.

      3. Than add flour, ketchup, seasonings & water, cook for 10 minutes till thick.

      4. Remove mixture in a oven proof dish, add on it boiled pasta, boiled sliced egg, capsicum sliced, oregano leaves.

      5. Spread with white sauce, then grated cheese, beaten egg, bread crumbs, dot with butter.

      6. Bake on no 4 or 180c for ½ am hour. Serve with dinner rolls.
 

Manchurian Chicken

  Ingredients:

      Chicken (boneless) ½ kg

      Oil ¼ cup

      Salt ½ tsp

      White pepper ½ tsp

      Crushed red chili ½ tsp

      Chinese salt ½ tsp

      Ketchup 4 tbsp

      Vinegar 2 tbsp

      Garlic crushed 1 tsp

      Water 1-1/2 cup

      Corn flour 1 tbsp

      Coriander leaves 2 tbsp

      Green chilies 2(chopped)

      Method:

      1. Ina pan heat oil and fry garlic till light golden

      2. Add chicken and fry for 1 minute

      3. Add all seasonings, ketchup, vinegar and water

      4. When mixture starts boiling add corn flour paste and simmer for 3-4 minutes

      5. Lastly add chopped coriander and green chilies

      6. Serve sizzling hot.

DHANIA CHICKEN

      Ingredients:

      Chicken 1 kg made into karhai pieces.

      Ginger garlic paste 1 tbsp

      All spice powder /  garam masala ¾ tsp

      Tomato paste 4 tbsp

      Coriander powder 1 tbsp, heaped

      1. Mix these ingredients well in a mixer or can kneed with hands (without water)

      METHOD

      Heat oil and add sliced ginger , fry for a minute , add in stock and boil when boiling add marinated chicken , add lemon juice , tobacco ,cook for 5 mins till chicken is tender .

      Just before serving add fried rice and coriander leaves


     

     note  aunty made a vegetarian version and therefore , did not use chicken but carrot 1 sliced and mushrooms 1/2 cup, keep the same recipe omit chicken and add vegs. and it was a low cal so she did not deep fry the rice instead she baked them and she also said that if u cant do that , use murmure or puffed rice, rice krispies one handul per bowl before servng

      METHOD

      Mix well potatoes and chicken with all the ingredients , add egg carefully u may not need entire egg. Add half mix and if u need add remaining half.

      Make flat round patty on your palm place a cheese cube on it and roll it to make a ball around it.

      Beat an egg and dip in it then roll in fresh breadcrumbs , deep fry for 2 to 3 mins not more on high heat otherwise they will break.

      1. In a large skillet boil together the mutton, water, turmeric and salt , till the meat becomes tender and 1 cup of stock is left.

      2. In another pan heat oil and add whole red chilies, mustard seeds, cloves, cumin seeds, onion seeds. Sauté for 1 minute.

      3. Now add the boiled meat into the pan with the chili powder, ginger garlic paste and jiggery. Fry well . Then add the stock, lemon juice and cook for 5 minutes.

      4. Then add the yogurt and fry very well till the oil forms a separate layer on top.

      2. Saute garlic in oil

      3. Pan fry chicken for 5 minutes,

      4. add sweet corn, capsicum and keep aside

      5. boil pasta with 1 tsp salt strain and keep aside,boil for about 6 to 8 min only.

      6. For white sauce, heat butter, add flour, stock, milk, mustard, salt, white pepper, cheddar cheese as per the qty mentioned above,whisk till thick

      Assemble:

      1. Grease oven proof dish, layer with all the pasta, then all mozzarella cheese, then chicken, then chilli garlic sauce. Finally pour all the white sauce.

      2. Sprinkle Parmesan cheese, oregano,dot with chilli garlic sauce and butter

      3. Bake in Pre-heated oven for 25 minutes.at 180 degrees. till white sauce is seen boiling on the edges

      Biscuits

      7 Tbsp butter - softened

      1/2 Cup icing sugar

      2 Tbsp orange rind

      1 Tbsp cornflour

      1 cup Flour

      1/2 cup self raising flour

      For Orange Cream

      2 Tbsp butter

      3/4 cup icing sugar

      2 Tbsp orange juice

      Beat butter with a beater. Add icing sugar and orange rind into the butter and continue beating.

      Add self raising flour, corn flour and flour and fold with a spoon or spatula by hand.

      The mixture should be soft.

      Take and icing bag and place star nozzle on tip. Fill the icing bag with the biscuit mix.

      Make medium size cookies by pressing into icing bag and lifting up.

      Bake at 180 degrees C for about 12 mins or until lightly browned.

      Cool on wire racks.

      For orange cream, beat butter with sugar until becomes light - add icing sugar and orange juice while continuing to beat.

      Spread this cream on biscuits and sandwich with another biscuit.

      Cookies are ready to enjoy.

      Method for Paratha:

      Sieve together both the flours with salt, add in ghee, and rub lightly. Knead with warm water into medium dough. Leave to rise for an hour covered with a damp napkin. Make into balls; roll ball into a saucer size. Spread with ghee fold as shown. Cook on tawa, adding about 1 tbsp ghee when frying parathas.

      Method for chicken:

      Marinate chicken cubes with salt, ginger garlic, cumin, all spice, yogurt, cream, chili powder, white pepper and cheese for 30 minutes, put on skewers and bake for 20 minutes on 180 degrees, remove and give dum of coal.

      To serve:

Method

In a pan put 1 kg mutton bong with 4 cups water, 2 tbsp chopped ginger, 1 ½ tbsp chopped garlic, ½ cup yogurt, 6 cloves, 8 green cardamom, 8 black pepper, 2 tsp salt and cook till tender and 1 cup stock left, now shift the meat to the corner of the pan and make a hollow in the centre. Mix ¼ tsp yellow color in 1-1/2 cup yogurt and spread on the mutton pieces only, add 1 ½ tsp white cumin seeds, ¼ tsp mace powder, 20 green chilies, 1 bunch mint chopped, ½ bunch chopped coriander leaves and 1 tbsp ginger Juliennes. Now put the boiled rice in hollow portion first and then spread rice on mutton to cover the meat well, cover and simmer for 15 minutes, when steam start to come out add the ghee and water mixture 1 cup saved from the boiled rice. Then add 1 tsp crushed saffron and 1 tsp kewra mixture, simmer for 15 minutes, mix biryani well and serve.

In a pan, put together 1 tbsp Water, ½ tsp Vanilla essence, 2 tbsp Butter, 3 tbsp Cocoa powder, 2 tbsp crushed Walnuts, 4 tbsp icing sugar, 4 tbsp Corn syrup and 2-3 tbsp Fresh cream. Cook for 2 minutes. Heat sizzler plate slightly and brush with oil. Just before serving place 2-3 brownies on the plate, put scoops of vanilla ice cream on each one. Bring this to the table and pour boiling sauce over the ice cream. Make sure that the sizzler plate and the sauce are very hot.

      Mix all together in a bowl, Flour 2 cups, Instant yeast 1 ½ tsp, Sugar 1 tsp, Oil 4 tbsp, Salt ½ tsp, Sugar 1 tsp, Egg 1, Milk powder 2 tbsp and knead with Luke warm water into a medium soft dough, knead the dough until smooth, put in a greased bowl leave to rise for 30 minutes covered. Then roll the dough and put in a pizza plate, spread with pizza sauce, top with filling and allow to rise for 30 minutes then bake on no. 6 or 200 degrees for 25 minutes.

      Method for Pizza Sauce

      In a pan put together 4 blended tomatoes, ½ cup tomato paste, ½ tsp oregano leaves, 1 tsp crushed red pepper, ¼ tsp white pepper, 1 tsp crushed garlic, 2 tbsp oil and 4 tbsp ketchup. Let it cook for five minutes and use as required.

Method for Base

Beat 4 ounces butter and 4 tbsp sugar till fluffy, mix in 1 ½ cup flour and ½ cup chopped walnut, mix well and knead to dough. Press dough into a round on a greased pizza plate, prick with fork, and bake for 20 minutes until golden brown, cool and arrange 3 bananas on crust, spoon filling on top of bananas, decorate top with cherries, pineapple, walnuts and grated chocolate, drizzle chocolate sauce on top and serve chilled.

Method

Sift together 3 cups flour, ½ tsp salt and 2 tsp sugar in a bowl, add 1 tbsp instant yeast, 4 tbsp milk powder, 4 tbsp melted butter and knead with Lukewarm water as required into a soft dough, leave the dough to rise for 1 hour until double. Roll the dough into rectangular, brush with extra butter, spread evenly with chocolate spread combined with 2 tbsp extra sugar and 1 tsp cinnamon powder, roll from the short side like a Swiss roll, cut into 2 cm thick slices, place on a greased baking sheet, leave it for 45 minutes till double, bake on 200 degree for 10 minutes, then reduced oven to 180 degrees and bake for another 20 minutes.

            Icing sugar 4 ounces

            Chocolate 6 ounces

            Fresh cream 2 packets

            Method for Cake

            Cook 4 ounces cooking chocolate with ½ cup of cream till melted, remove, cool and use. Beat 2 cups butter, 1 ½ cup sugar and 2 tsp vanilla essence till fluffy. Add in 5 tbsp sieved cocoa powder, beat 6 egg whites very stiff, add to it the egg yolks and beat well together, add the beaten egg mixture to the butter mixture and continue to beat well. Now fold in the melted chocolate and cream mixture, lastly fold in the sieved flour and baking powder mixture, mix well, pour into 2 well greased and paper lined 9 inches sandwich pan and bake on 180 degree for 45 minutes. Remove cool completely. Spread 1 layer of cake in cake plate, moist with milk apply icing, sandwich the second cake, moist with milk, cover sides and top with cream, level properly, put in freezer for half hour, remove and put in fridge.

            Melt 6 ounces chocolate with ½ cup cream and 1 tbsp heaped cocoa powder, remove and cool, beat remaining cream with 4 ounces icing sugar; fold in the dissolved chocolate mixture, chill for 10 minute

            In a bowl beat together 250 gm butter, ½ tsp coconut essence and 1egg yolk for 2 minutes, add 100 gm icing sugar and beat well, mix together 2 ½ cup desiccated coconut and 4 tbsp flour, fold in the butter mixture, mix slightly, keep in freezer for 30 minutes, now remove from freezer, roll and cut with biscuit cutter, roll in reaming ½ cup coconut and put in an ungreased baking tray. Bake in a pre heated oven of 190 degrees for 20 minutes

            In a bowl beat together 250 gm butter, ½ tsp coconut essence and 1egg yolk for 2 minutes, add 100 gm icing sugar and beat well, mix together 2 ½ cup desiccated coconut and 4 tbsp flour, fold in the butter mixture, mix slightly, keep in freezer for 30 minutes, now remove from freezer, roll and cut with biscuit cutter, roll in reaming ½ cup coconut and put in an ungreased baking tray. Bake in a pre heated oven of 190 degrees for 20 minutes

Lemon Meringue Pie

            Method for Base

            Beat 4 ounces butter and 3 tbsp sugar, add in 6 ounces flour and 1 tsp baking powder, now knead it to dough with chilled water if needed, roll the dough and line a 8 inch pie plate, prick base with fork and bake in a preheated oven of 190 degrees C for 20 minutes, remove and keep aside.

            Method

            Beat 3 egg yolks with 4 tbsp sugar, 2 cups milk and 2 tsp heaped flour, put to cook on low flame, string continuously till thick, remove from fire, add 2 tbsp lemon juice, a pinch of yellow color and 1 tbsp butter, pour mixture in the baked pie shell, beat 3 egg whites stiff with ¼ tsp cream of tartar, put meringue in a piping bag and pipe on the filling, bake in a very hot oven 225 degree C for 5 minutes, serve hot or cold.

Beat ¼ cup butter and ½ cup sugar till creamy, add in half beaten egg and beat again, now add ½ cup grated carrots, ¼ cup milk and 1 tsp vanilla essence. Now add 1 cup flour, 1 cup oats, ½ cup chopped walnuts, 1 tsp baking powder and ½ tsp cinnamon powder. Mix well. Drop with spoons full on greased cookie sheet, bake on 190 degree for 15 minutes until slightly brown, cool dip in icing and serve.

Method for icing

Beat together 2 tbsp butter, 1 cup heaped icing sugar adding 1 to 2 tbsp orange juice to make thick spreadable consistency icing.

Cook 250 gm soaked chickpeas with 1 tea bag till tender, discard the tea bag and keep aside, heat ½ cup oil in a pan, add 1 tsp white cumin seeds, 1 tbsp chopped ginger garlic paste and 4 tbsp chopped onion, fry till color of onion turn to golden brown, add in 2 tbsp National Sabzi Masala, 2 tsp chili powder, 2 tsp dry mango powder, 2 tsp coriander powder, ¼ tsp turmeric powder, 1 tsp cumin powder and ½ tsp salt with ½ cup of water, fry for 5 minutes, add in the boiled chickpeas with 1 cup of water, cover and cook for 15 minutes till done.

Method for Bhatura

Mix 1 ½ cup flour, 1 cup mashed potato, 2 tbsp oil and ½ tsp salt, knead into a firm dough without adding any water, knead very well till smooth, add little yogurt if required, cover with a wet cloth and leave it for 15 minutes, divide the dough into 8 equal parts and roll out into ¼ plate size puri , deep fry in hot oil till light golden, serve with chana.

Beat 6 ounces butter and 6 ounces sugar till light creamy, add in 3 egg yolks one at a time and beat well, beat egg white stiff and fold in the mixture, sieve together 6 ounces flour, ¾ tsp baking powder, baking soda, ¼ tsp cake spice, ¼ tsp ground nutmeg and ¼ tsp cinnamon thrice, divide the sieved flour into 3 parts, in 1st part add all the dry fruits and mix well, now put 2nd part of flour into beaten egg mixture and fold, then add the flour with fruits, then finely fold in the 3rd part of the flour, mix all well lightly, put in the greased ringed tin and bake in a pre heated oven of 150 degree C for 1 hour.

In the base and one on top of the balls, apply little oil on it and leave it to rise again for 1 hour, brush with beaten egg, bake in hot oven, 200 degree C for 20 minutes, till light golden, remove cover immediately with damp napkin

            Method

            Method for Filling

            In a bowl, mix together, 2 tbsp raisins, 2 tbsp orange peel, 2 tbsp chopped almonds, 2 tbsp each green and red glazed cherries, 2 tbsp currents, 1 tbsp pistachio and 1 tbsp chopped walnuts, ¼ tsp cinnamon powder and 2 eggs, mix well, put about 1 tbsp full of mixture in the empty tarts, bake on 180 degree for 20 minutes. After it is bake, dip the edges in jam. Garnish with chopped pistachio.
