Vegetable Seekh Kabab

Potatoes (boiled) 1

Cabbage (shredded) 1cup

Carrots (shredded) 1...

Peas 250g

Mint(chopped) 2tbsp

Coriander(chopped) 2tbsp

Green chilies(chopped)1tbsp

Cumin(roasted)1tsp

Onions(fried) 1cup

Chat masala 2tsp

Black pepper(powdered)2tsp

Coconut(ground) 2tbsp

Red chili powder 1tsp

Allspice powder 1tsp

Nutmeg (ground) 1/4tsp

Cardamom (ground) 1/4tsp

Rice flour 1/2cup

Egg 1

Skewers as needed

Salt 1tsp

Cooking oil for frying

Method:-

1) In a bowl mix together the potatoes, peas, carrots, cauliflower, coriander, mint leaves, onions and green chilies.

2) Now add an egg and 1/2cup rice flour. Then add 1tsp cumin, 2tsp chat masala,2tsp black pepper powder and 2 tbsp coconut, 1tspa ll spice powder, 1tsp red chili powder,1/4tsp fenugreek,1tsp salt,1/4tsp cardamom powder and 1cup fried onions. Mix all the ingredients well.

3) Divide the batter into 16equal portions .Take a portion of this mixture and place on a skewer. Press it around till it is evenly layered. Press the ends firmly

4) On a medium flame deep fry the vegetable kebabs in a large saucepan ,till golden brown

Ingredients:

Plain Flour: ½ kilo

Egg: 1

Yeast: 1 table sp

Salt: ¼ tsp

Ghee: ½ cup

Milk: for making dough

Sugar: ½ cup

Method:

1. Add water in yeast and soak for 10 minutes. When it rises and becomes double in quantity , add plain flour, egg, yeast, sugar, salt and ghee to milk, make dough, cover and keep for 20 minutes.

2. Mix sugar and water in a separate bowl. Now, make small chapattis of the prepared dough and brush the sugar syrup mixture over chapattis and make small holes with a fork

3. Preheat oven at 150° and bake the chapattis for 10 minutes

Almonds heart biscuits by shireen

      Ingredients

      Flour ½ cup

      Ground almonds ¼ cup

      Butter 2 ½ ounce

      Rice flour 1 tbsp

      Icing sugar 2 tbsp

      Flaked almonds toasted 4 tbsp

      Ingredients for icing

      Icing sugar ½ cup

      Egg white ½ beaten

      Flour ½ tsp

      Pink color 2 drops

      Method

      Beat 2 ½ ounce butter and 2 tbsp icing sugar till fluffy, add in ½ cup flour, ¼ cup ground almond and 1 tbsp rice flour, knead lightly until smooth, roll, cut into heart shape with cutter, place on lightly greased tray, bake on 150 degree for 12 minutes, remove from oven, spread with icing sugar on each biscuit, sprinkle with 4 tbsp toasted almond.

      Method for icing

      Beat half of egg white lightly with fork, mix in ½ cup sifted icing sugar and ½ tsp flour, add drops of pink food color, use as required.

Achari Bhindi by shieen

Ingredients

Lady finger ½ kg

Tomatoes chopped 3

Curry leaves 15

Garlic paste 1 tsp

Oil 3 tbsp for cooking

National Achaar Gosht Masala 3 tbsp heaped

Oil to deep fry lady finger

Method

Heat oil in a wok, deep fry ladyfinger on medium flame in two batches, drain and keep aside, heat 3 tbsp oil in another wok,add  one onion  sliced fry till pink then  add 1 tsp garlic paste, 15 curry leaves, 3 chopped tomatoes and 3 tbsp national Achaar Gosht Masala, fry well till oil separate, lastly add ½ kg fried ladyfinger, cover and simmer for 10 minutes. Serve with puri.

Chicken Tikka Pizza by shireen

                                    Chicken Tikka Pizza

          Ingredients for dough

      Flour 200 grams

      Instant yeast 1-1/2 tsp

      Sugar 1 tsp

      Salt ` ½ tsp

      Oil 3 tbsp

      Milk powder 2 tbsp

      Egg 1

      Luke warm water as required

      Method for Dough:

      In a bowl mix everything together and knead to soft dough.

      Filling:

      Chicken tikka shredded 1 cup

      Chopped onion 3 tbsp

      Sweet corn 3 tbsp

      Capsicum chopped 3 tbsp

      Tomato chopped 3 tbsp

      Olives 4 sliced

      Oregano leaves 1 tsp

      Cheddar cheese 1 cup

      Mozzarella cheese 1 cup

      Method:

      1. Grease 10 inch pizza plate spread with dough and bake blind for 10 minutes

      2. Remove from oven cool slightly spread with pizza sauce then 3 tbsp cheddar cheese.

      3. Add all filling oregano leaves, mozzarella and cheddar cheese bake on 200 degrees for 20 minutes.

      Pizza Sauce:

      Tomato paste ½ cup

      Ketchup 2 tbsp

      Garlic paste ½ tsp

      Chili powder ½ tsp

      Salt ½ tsp

      Oregano leaves ½ tsp

      Oil 2 tbsp



note . pehle pizza bread ko sirf 10 min keliye empty bake karna hai.. phir oven se nikal kar os ki topping kar ke wapis oven mei 20 min bake karna hai..
    

Mexican Chocolate Pudding by shireen

                                         Mexican Chocolate Pudding

Ingredients

Cooking chocolate chopped 4 ounces

Milk 3 cups

Sugar ½ cup

Cream ½ cup

Vanilla essence 1 tsp

Corn flour 4 tbsp

Method

Mix together 4 tbsp corn flour, ½ cup sugar, 3 cups milk and cook on low flame till thick, add 4 ounces chopped chocolate. Whisk well till chocolate melts, remove, add 1 tsp vanilla essence and ½ cup cream, pour into individual serving dishes, decorate with cream and chocolate. Serve chilled.

Drumstick Masala by shireen

                                                  Drumstick Masala

Ingredients

Chicken drumsticks ½ kg

Tomatoes chopped 2

Green chilies 3

Green cardamom 4

Yogurt ½ cup

Onion fried & grinded ½ cup

Oil ¼ cup

Ginger garlic paste 1 tsp heaped

White cumin crushed 1 tsp

Salt 1 tsp

Ginger juliennes 1 tbsp

Chili powder 2 tsp

Turmeric ¼ tsp

All spice ½ tsp

Coriander leaves chopped 2 tbsp

Method

Give cuts on each drumstick, heat ¼ cup oil in pan, add 1 tsp heaped ginger garlic with 2 tsp chili powder, ¼ tsp turmeric, 1 tsp crushed white cumin, 1 tsp salt, 4 green cardamom, 2 chopped tomatoes and ½ cup yogurt, fry well, add drumsticks and fry well, add ½ cup ground brown onion. Also add 1 cup of water, cover and cook till drum sticks tender. Lastly add ½ tsp all spice, garnish with 2 tbsp chopped coriander, 3 green chilies and ginger juliennes.
