Creamy Caramel Pudding by rida

                                                   Creamy Caramel Pudding

Ingredients

Eggs 6

Cream 1 packet

Milk 1 cup

Almond (chopped and fried) 1 cup

Vanilla essence ½ tsp

Castor sugar ½ cup

Method

In a bowl Beat together 6 eggs, 1 packet cream, 1 cup milk and ½ tsp vanilla essence. Heat pan and spread 2 tbsp caster sugar, cook till it melts. Spread almond in mold; now pour melted sugar on top. Put the eggs and cream mixture in mold. Fill the baking tray water and put mold in it. Bake in a pre heated oven of 150 degrees for 30 minutes

Lasagna Roll by rida

Ingredients

Lasagna 4 sheets

Chicken boneless 300 gm

Onion chopped 1

Capsicum 1

Egg 1

Basil leaves 6

Tomato puree 1 cup

Tomato ketchup ½ cup

Ricotta cheese ½ cup

Mozzarella cheese ½ cup

Garlic chopped 1 tsp

Crushed red chili 1 tsp

Salt 1 tsp

Oregano ½ tsp

Oil 2 tbsp

Method

Heat oil in pan, Sauté 1 tsp chopped garlic and 1 chopped onion for 2 to 3 minutes. Now add 300 gm chicken and cook till its color turn to golden brown. Now add 1 cup tomato puree, 1 tsp salt and 1 tsp crushed red chili, cook till water dries. Now add ½ cup tomato ketchup, ½ tsp oregano and 1 capsicum.

In other pan cook together ½ cup ricotta cheese and ½ cup mozzarella cheese. Now put some chicken mixture on lasagna sheets, top with melted cheese and roll. Bake it on 150 degrees for 10 minutes. Serve hot.

Pickled Chicken Drumsticks by rida

Ingredients

Drum Sticks 6

Clove 2

Whole red chili 10

...Onion ground 1 cup

Whole black pepper 1 tsp

Cumin seeds 1 tsp

Mustard seeds 1 tsp

Fennel seeds 1 tsp

Red chili powder 1 tsp

Jiggery 1 tsp

Ginger garlic paste 1 tbsp

Onion seeds ½ tsp

Salt ½ tsp

Lemon juice 2 tbsp

Ingredients for marinating

Yogurt 1 cup

Turmeric ½ tsp

Oil 4 tsp

Method

Marinate 6 drum sticks with 1 cup Yogurt, ½ tsp Turmeric and 4 tsp Oil. Heat oil and add 2 Cloves, 10 whole red chilies, 1 tsp Whole black pepper, 1 tsp Cumin seeds, 1 tsp Mustard seeds, 1 tsp Fennel seeds, ½ tsp Onion seeds and 1 tbsp Ginger garlic paste. Fry well and add 1 cup ground Onion. Cook for few minutes and add marinated chicken. Also add 1 tsp Red chili powder and ½ tsp Salt. Cover and cook for 10 minutes. Lastly add 1 tsp Jiggery and 2 tbsp Lemon juice. Fry and serve hot.

Ingredients:

1/2 cup cream

1/2 cup plain flour (maida)

2 eggs

100 gms chocolate

cherries, for garnishing

1 tbsp coffee powder

2 tsp baking powder

1/2 tsp vanilla essence

cream, for garnishing

1/2 cup brown sugar

50 gms butter

2 tbsp oil

2 tbsp cocoa powder

cupcake moulds (as needed)

Method:

Take a mixing bowl and put butter and brown sugar in it. Simply mix it. Add oil. Then beat it with a beater until the butter is completely melted and mixed. Now add vanilla essence, eggs, coffee and then again start beating it. Then add cream and beat. Add cocoa powder and baking powder. While beating, slowly add the flour( remeber not to add all at once) Grease the cupcake moulds by applying some oil on them. Pour the cupcake mixture in the moulds.Take a chocolate bar and break it into small pieces. Put one piece on every cupcake. Put all the moulds in an oven-proof dish. Now put them into a microwave for 5-6 mins. When they are ready, keep them aside so that they can be chilled. Carefully take out the cupcakes from the moulds. Then make chocolate sauce: take some cocoa powder, sugar and oil and then mix them. Pour in small quantities over the cupcakes. Then decorate them with cream and cherries!!!!

Kidney Beans Curry by rida

                                            Kidney Beans Curry

Ingredients

Red Beans (boiled) ½ kg

Tomato 250 gm

Onion 2

Tamarind pulp 1 cup

Turmeric 1 tsp

Red chili powder 2 tsp

Cumin (roasted) 2 tsp

Carom seeds (roasted) ½ tsp

All spice powder 1 tsp

Salt 1 tap

Green chilies 4

Green coriander ½ bunch

Oil ½ cup

Method

Heat ½ cup oil and fry 2 chopped onions till golden brown. Take out the fried onion and grind with 250 gm tomatoes. Put 2 tsp red chili powder, 1 tsp salt, 1 tsp turmeric, 2 tsp roasted cumin, ½ tsp roasted carom seeds, and tomato onion mixture in hot oil. Fry well. Add ½ kg boiled red beans and ½ cup water. Cook for 10 minutes on low flame. Now add 1 cup tamarind pulp, 4 green chilies, ½ bunch coriander leaves and 1 tsp all spice powder. Turn the flame off and serve.

Ras Malai by rida

                                             Ras Malai

Ingredients

Milk 1 liter

Dried Milk 1 cup

Egg white 1

Baking powder ½ tsp

Sugar ½ cup

Cardamom powder ¼ tsp

Corn flour 1 tbsp

Kewra essence 1 tsp

Almond and pistachio 50 gm

Method:

In pan boil milk add cardamom powder and sugar.

Beat eggs and mix with baking powder and dry milk.

Now make small balls and put these balls in boiled milk cook for 3 to 4 minutes

Then dissolve corn flour with water and cook 3 to 4 minutes more.

Now for topping add kewra essence, pistachio and almonds on it and turn off the flame.

Ingredients:

Dry milk 2 cups

Ghee 2 tbsp

Egg 2

Milk 2 kg

Sugar 2 cups

Green cardamom 8-10

Pistachio As required

Method:

Boil milk with cardamom and sugar. Stir the sugar till it gets dissolved. Cook milk for 5-10 minutes.

Make a dough by mixing dry milk, baking powder, plain flour, melted ghee and eggs,. Then make small balls. Add these balls into milk which is prepared earlier and cook on high flame for 5 minutes, then lower the flame and cook it for 10-15 minutes. Garnish with pistachio slices and serve chilled.

Pani Puri by rida

                                            Pani Puri:

Ingredients for golgappa:

Semolina ½ cup

Plain flour ½ cup

Method:

Mix semolina and flour and knead to a stiff dough with ¼cup water

cover dough with wet cloth keep aside for 1 hour make small balls

sand roll into thin purees and deep fry.

Filling:

Potatoes 1 (cut into cubes & boiled)

Chick peas 1 cup (boiled)

Sweet chutney ½ cup

Ingridients for pani:

Mint leaves ½ bunch

Coriander leaves 2 tbsp

Green chili 1

Lemon juice 2 tbsp

Black salt 1 tsp

Salt ½ tsp

Roasted crush cumin 1 tsp

Crushed black pepper ½ tsp

Fennel seeds ½ tsp

Dried ginger ½ tsp

Method for pani:

Grind all the ingredients for pani into a fine paste,

add 3 cups chilled water to it mix well chill and serve.

To serve:

Make a hole in the center of puri fill with boil chick

peas and boiled potato, add tsp of sweet chutney fill it with pani
