Kidney Beans Curry by rida

                                                  Kidney Beans Curry

Ingredients

Red Beans (boiled) ½ kg

Tomato 250 gm

Onion 2

Tamarind pulp 1 cup

Turmeric 1 tsp

Red chili powder 2 tsp

Cumin (roasted) 2 tsp

Carom seeds (roasted) ½ tsp

All spice powder 1 tsp

Salt 1 tap

Green chilies 4

Green coriander ½ bunch

Oil ½ cup

Method

Heat ½ cup oil and fry 2 chopped onions till golden brown. Take out the fried onion and grind with 250 gm tomatoes. Heat oil in a pan and add 2 tsp red chili powder, 1 tsp salt, 1 tsp turmeric, 2 tsp roasted cumin, ½ tsp roasted carom seeds and tomato onion Fry well till the oil forms a separate layer on top.. Add ½ kg boiled red beans and ½ cup water. Cook for 10 minutes on low flame. Now add 1 cup tamarind pulp, 4 green chilies, ½ bunch coriander leaves and 1 tsp all spice powder. Turn the flame off and serve.

Chocolate Flummery by rida

Ingredients

Gelatin powder 1 tbsp

Cream 1 packet

Chocolate (melted) 200 gm

Castor Sugar ½ cup

Chocolate for garnish

Method

Cook 200 gm of chocolate with 1 tbsp gelatin powder in double boiler. Then leave it to cool. Beat 1 packet cream with ½ cup castor sugar till thickens. Now fold the chocolate mixture into the cream. Pour this mixture in serving bowl. Garnish with chocolate and serve.

Duchess Potatoes by rida

Ingredients

Potatoes (boiled) ½ kg

Butter 50 gm

Egg (beaten) 3

Nutmeg a pinch

Black pepper ½ tsp

Salt ½ tsp

Method

Peel the boiled potatoes, put in a chopper with 2 eggs, 50 gm butter, a pinch of nutmeg, ½ tsp black pepper and ½ tsp salt. Chop well and fill this mixture in piping bag. Make into any shape, brush the egg on top of each potato and bake on 200 degrees for 15 minutes.

Dates and Nut Bread by rida

Ingredients

Flour 350 gm

Baking powder 2 tsp

Sugar 250 gm

Eggs 3

Milk 1 cup

Butter 100 gm

Dates chopped 1 cup

Walnuts chopped 1 cup

Method

In a bowl beat 100 gm butter, 250 gm sugar, 3 eggs, 1 cup Milk and 2 tsp Baking powder. Slowly add 350 gm flour and fold till mixture thickens. Add 1 cup chopped dates and 1 cup chopped walnuts. Fold and pour this mixture in a mould. Bake on 200 degrees for 30 minutes.

Microwave Chocolate Sponge Pudding by rida

Ingredients

Egg 4

Coco powder 4 tbsp

Flour 1-1/2 cup

Butter 1 cup

Sugar 1 cup

Corn flour 2 tbsp

Baking powder 1 tbsp

Chocolate 100 gm

Milk ½ cup

Marsh mellow 6

Method

In a bowl, add 4 eggs, 4 tbsp coco powder, 1-1/2 cup flour, 1 cup butter, 1 cup sugar, 2 tbsp corn flour and 1 tbsp baking powder. Beat with a beater. Pour this mixture in plastic or glass tray and put in microwave oven for 8 minutes.

Method for Pudding

Cook 100 gm chocolate, ½ cup milk, and 6 Marsh mellow on low flame. Pour this pudding mixture on cake and serve.

Shami kabab by rida

Ingredients

Mince Meat 250 gm

Gram lentil (soaked) 4 tbsp

Potato (boiled) 1

Cumin ½ tsp

Fennel seeds 1 tsp

Whole coriander 1 tsp

Green cardamom 2

Whole red chili 6

Salt 1 tsp

Egg 1

Garlic 4 cloves

Fresh coriander 2 tbsp

Mint leaves 2tbsp

Green chilies 2

Ginger chopped 1 tsp

All spice powder 1 tsp

Oil for frying

Method

1)In a pan, put 250 gm mince, 4 tbsp gram lentil soaked, ½ tsp cumin, 1 tsp fennel seeds, 1 tsp whole coriander, 2 green cardamom, 6 whole red chili, 1 tsp salt, 1 tsp chopped ginger, and 4 garlic cloves.

2) Boil on low flame with 2 glasses of water. When water dries and all ingredients are tender turn the flame off and allow to cool

3) Add 1 boiled potato to the meat and chop the mixture in chopper. Add 1 egg, 2 tbsp fresh coriander, 2 tbsp mint leaves, 2 green chilies, and 1 tsp all spice powder. Mix well.

4)Shape into round kebabs and shallow fry in hot oil.

Mesoo Pak by rida

Gram flour (roasted) ½ cup

Ghee 250 gm

Eggs 4

Sugar 250 gm

Cardamom powder ¼ tsp

Kewra 1 tsp

Edible silver paper 1

Pistachio (finely chopped) 1 tbsp

Method

Blend together 250 gm ghee, ½ cup roasted gram flour, 250 gm sugar, 4 eggs, ¼ tsp cardamom powder, and 1 tsp finely chopped pistachio. Blend for 3 to 4 minutes. When the sugar dissolves, put this mixture in a pan and cook on low flame. Stir continuously. When it turns to golden brown and the ghee forms a layer on top, pour this mixture in a greased oven proof tray. Spread finely chopped pistachio, press with a spoon. Leave it to cool, cut into pieces, garnish with silver paper and serve.
