Enchiladas
Ingredients for Chicken Filling
Chicken Boneless ½ kg
Onion 2
Garlic chopped 1 tsp
Cumin 2 tsp
Salt 1 tsp
Black pepper 1 tsp
Fresh coriander chopped 2 tbsp
Oil 2 tbsp
Ingredients for Tomato Sauce
Onion 1
Crushed Red chili 1 tbsp
Tomato chopped 250 gm
Tomato paste 1 cup
Lemon juice 2 tbsp
Brown sugar 2 tbsp
Salt ½ tsp
Black pepper 1 tsp
Garlic chopped 1 tsp
Mozzarella cheese 6 ounce
Oil 2 tbsp
Tortillas 4
Method:-
In a pan 2 heat 2tbsps of oil and sauté 1tsp crushed garlic. Fry for 1-2 minutes then add 1/2kg boneless chicken , 2chopped onions,2tsp white cumin, 1tsp salt,1tsp pepper,2tbsp chopped coriander. Cook until the chicken is tender and turn the flame off.
Method for making tomato sauce
In a separate pan heat 2tbsps oil add 1tsp crushed garlic, 250g finely chopped tomatoes2tbsp brown sugar, 1/2tsp salt and 1tbsp crushed red chili .Cook until the tomatoes are tendered. Then add 1 cup tomato paste, 2tbsp lemon juice and 1tsp black pepper mix well and turn the flame off.
Spread a layer of pita bread on a baking tray. Then spread a layer of chicken and then a layer of tomato sauce. Continue alternating the layers and lastly top with 6 ounces of mozzarella cheese .Bake at 190C for 1o minutes.

Brownie Pizza by rida
Brownie Pizza
Ingredients
Flour 1 cup
Castor Sugar 1 cup
Eggs 2
Butter 100 gm
Cocoa Powder 2 tbsp
Baking powder 1 tsp
Vanilla Essence ½ tsp
Ingredients for topping
Cream (whipped) 200 gm
Banana 2
Pineapple 1 cup
Walnut 1cup
Chocolate Sauce 2 tbsp
Method:-
In a saucepan add 100g of butter and 2tbsps cocoa powder. Stir and cook until a uniform consistency is formed.
Now add 1 cup sugar and stir until it dissolves. In a separate bowl beat two eggs along with 1/2tsp vanilla essence. Pour the melted butter and cocoa mixture into the eggs and mix well. Add 1tsp baking powder and 1 cup white flour. Mix well until a smooth consistency is reached .Pour the mixture into a baking tray and bake at 200C for 20 minutes.
Method for topping:-
Slice the brownies into cone shaped wedges. Pour 200g grams whipped cream , 1cup pineapples, 1 cup chopped walnuts, 2 bananas and 2tbsp chocolate sauce. Refrigerate and serve cold.

Method
Heat 50 gm butter, fry 1 cup peanut and 1 cup almond. Now crush the fried dry fruits. Separately cook 200 gm chocolate with ½ cup glucose, ½ tsp vanilla essence and 2 tbsp castor sugar. Cool this mixture and fold in crushed nuts. Make small balls and freeze.

Sooji aur Nariyal ka Halwa
Ingredients
Semolina 1 cup
Desiccated coconut 2 cups
Dry milk powder 2 cups
...Sugar 1 cup
Cardamom powder ½ tsp
Ghee 1 cup
Kevra water 1 tsp
Almond & Pistachio chopped 1 cup
Water ½ cup
Method
In a pan heat 1 cup ghee and fry 1 cup semolina till it turns golden brown in color, add 1 cup sugar and 2 cups desiccated coconut, fry again till sugar dissolves. Separately dissolve 2 cups dry milk powder in ½ cup of water and add in the semolina mixture. Mix well and cook for 10 minutes on low flame. Sprinkle ½ tsp cardamom powder, turn the flame off and lastly add 1 cup chopped almond and pistachio, 1 tsp kevra. Serve hot.

Ingredients
Flour 250 gm
Semolina 125 gm
Ghee 2 tbsp
...Milk (to knead) 1 cup
Almond & pistachio 50 gm
Green cardamom (crushed) 4
Sugar 250 gm
Ghee (for fry) as required
Method
Mix together 250 gm flour, 125 gm semolina, 2 tbsp ghee and knead to a firm dough with 1 cup milk. In a saucepan make the sugar syrup with 250 gm sugar, 1 cup water and 4 crushed green cardamoms and 2tbsp ghee .Heat on a medium flame till the syrup thickens. Take a sufficient amount of dough, press it hard in the strainer, which should be placed on wok containing hot ghee. Hence small balls of dough will formed. After frying drain out oil. Dip in sugar syrup overnight. Garnish with chopped almond and pistachio.

Rice flour 1 cup
Sugar 2 cup
...Water 1 cup
Cardamom powder ½ tsp
Butter 50 gm

Method
Heat 1 cup ghee in a pan; add 1 cup ground lentils and 1 cup rice flour. Fry well. In other pan, put 2 cups sugar, 1 cup water, 50 gm butter and ½ tsp cardamom powder. Heat on medium flame to make sugar syrup. Add lentils mixture and mix well. Pour this mixture in a greased tray; spread chopped almonds and pistachio on top. Leave it to cool and cut into pieces.

Stir continuously till the mixture thickens. Pour this mixture in a greased oven proof dish. Spread 1 cup walnut on top and bake on 150 degrees for 20 minutes.

Potatoes (boiled) ½ kg
Gram lentil (soaked) 1 cup
Whole red chili 12
Black pepper ½ tsp
Cumin 1 tsp
Black cardamom 2
Green cardamom 2
Salt 1 tsp
Ginger 1 piece
Garlic 4 cloves
All spice powder 1 tsp
Egg 2
Fresh coriander chopped ½ bunches
Mint chopped ½ bunches
Green chilies chopped 4
Oil for frying

Method
Cook 1 cup soaked Gram lentil with 12 whole red chili, ½ tsp Black pepper, 1 tsp Cumin, 2 Black cardamoms, 2 Green cardamoms, 1 tsp Salt, 1 piece of Ginger, 4 cloves Garlic and 2 glass water. Cook for 30 minutes till water dries and lentil is tender. Now put boiled lentil with boiled tomatoes in a chopper and chop well. Add in mixture 4 chopped green chilies, ½ bunch chopped fresh coriander, ½ bunch mint leaves, 1 chopped onion, 2 eggs and 1 tsp all spice powder. Make kababs and fry in hot.
